The broccoli casserole

txrad wanted to make something new last night. It was one of the best casseroles I've had in a very long time.



He prepared 4 cups of cooked brown rice and chopped 3 cups of broccoli. He then added some chopped onions and celery and sauteed them until the onions were slightly browning.


After sauteing, he added 1/2 cup chopped fresh parsley, a little dried marjoram, and dried dill from our garden. Salt was added during the saute process and a bit more prior to baking.

The rice and sauteed items are then combined into a bowl along with 2 cups of shredded cheese, 1 cup of milk and this is packed into a casserole dish, topped with raw sesame seeds and baked for 35 minutes at 375 F.

This was delicious and we had the leftovers for lunch today.



Served up with a breaded non-chicken (veggie) patty it was the perfect meal. As with any casserole, this one has some flexibility potential. We'll probably experiment with some variations.



I think this could even be kicked up a notch with just a little lemon zest.
